Description

Crispy roasted potato slices topped with melted cheese, savory bacon, and fresh green onions. This easy Irish Nachos recipe is a crowd-pleasing appetizer perfect for game days or casual gatherings.

Ingredients

Scale
  • 2 pounds potatoes, scrubbed and thinly sliced (about 1/8 inch thick)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces shredded cheddar cheese
  • 4 ounces crumbled cooked bacon
  • 1/4 cup chopped fresh green onions
  • Optional toppings: sour cream, salsa, jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato slices with olive oil, salt, and pepper until evenly coated.
  3. Spread the potato slices in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  5. Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese evenly over the crispy potatoes.
  6. Return the baking sheet to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and sprinkle with crumbled bacon and chopped green onions.
  8. Add any optional toppings you desire.
  9. Serve your delicious Irish Nachos immediately.

Notes

  • For extra crispy potatoes, ensure they are sliced thinly and not overlapping on the baking sheet.
  • You can substitute corned beef or pulled pork for the bacon for a different flavor profile.
  • Experiment with different cheeses like Monterey Jack or a blend of cheeses.
