Ingredients

  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 2 boneless, skinless chicken thighs
  • 1 cup buttermilk (for marinating)
  • 1 cup all-purpose flour (for dredging)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/4 cup honey
  • 1 tbsp hot sauce (adjust to taste)
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Stir in buttermilk just until combined. Turn dough onto a floured surface and knead gently.
  4. Roll out and cut into biscuits. Bake for 12–15 minutes or until golden.
  5. Meanwhile, marinate chicken thighs in buttermilk for at least 30 minutes.
  6. In a shallow bowl, mix flour with paprika, garlic powder, salt, and pepper.
  7. Dredge the marinated chicken in the seasoned flour.
  8. Heat oil in a skillet over medium heat. Fry chicken until crispy and cooked through, about 4–5 minutes per side. Drain on paper towels.
  9. In a small saucepan, warm honey with hot sauce and red pepper flakes over low heat until combined.
  10. To assemble, slice biscuits in half, add fried chicken, and drizzle generously with hot honey. Serve warm.
