Description

These High Protein Peanut Butter Yogurt Bites are a delicious snack that satisfy sweet cravings while providing a protein boost.


Ingredients

  • 1/2 cup Greek yogurt (full fat)
  • 1/4 cup powdered peanut butter
  • 1 tablespoon creamy peanut butter
  • 1/2 tablespoon maple syrup
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt for topping (optional)

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, powdered peanut butter, and maple syrup. Whisk until smooth and fully incorporated, ensuring no lumps remain.
  2. Spoon the yogurt mixture into a 12-cup mini muffin tin lined with silicone or paper liners. Fill each cavity about two-thirds full. Tap the tray on the counter to remove air pockets.
  3. Transfer the molds to a flat surface in the freezer and freeze for at least 3-4 hours, or until completely solid.
  4. In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 15-second intervals, stirring until smooth. Alternatively, melt in a double boiler.
  5. Carefully remove the frozen yogurt bites from their molds. Dip the top or entire bite into the melted chocolate and let excess drip off. Place them back on a parchment-lined tray.
  6. Drizzle the creamy peanut butter over the chocolate-coated bites. Sprinkle with flaky sea salt if desired.
  7. Return the bites to the freezer for another 30-60 minutes, or until the chocolate coating is set.
  8. Store the finished bites in an airtight freezer-safe container, separating layers with parchment paper. Enjoy straight from the freezer.
