Description
These High Protein Peanut Butter Yogurt Bites are a delicious snack that satisfy sweet cravings while providing a protein boost.
Ingredients
Scale
- 1/2 cup Greek yogurt (full fat)
- 1/4 cup powdered peanut butter
- 1 tablespoon creamy peanut butter
- 1/2 tablespoon maple syrup
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
- Flaky sea salt for topping (optional)
Instructions
- In a medium mixing bowl, combine the Greek yogurt, powdered peanut butter, and maple syrup. Whisk until smooth and fully incorporated, ensuring no lumps remain.
- Spoon the yogurt mixture into a 12-cup mini muffin tin lined with silicone or paper liners. Fill each cavity about two-thirds full. Tap the tray on the counter to remove air pockets.
- Transfer the molds to a flat surface in the freezer and freeze for at least 3-4 hours, or until completely solid.
- In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 15-second intervals, stirring until smooth. Alternatively, melt in a double boiler.
- Carefully remove the frozen yogurt bites from their molds. Dip the top or entire bite into the melted chocolate and let excess drip off. Place them back on a parchment-lined tray.
- Drizzle the creamy peanut butter over the chocolate-coated bites. Sprinkle with flaky sea salt if desired.
- Return the bites to the freezer for another 30-60 minutes, or until the chocolate coating is set.
- Store the finished bites in an airtight freezer-safe container, separating layers with parchment paper. Enjoy straight from the freezer.
Notes
