Ingredients

  • 3 pieces ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 2 cups oats
  • 1/4 cup almond milk
  • 1/4 cup raisins or nuts
  • 1 cup dark chocolate chunks
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp cardamom
  • dried cherries and slivered almonds
  • unsweetened coconut flakes and dried pineapple

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Mash the bananas in a large bowl until smooth, then stir in the unsweetened applesauce.
  3. Add the vanilla extract and ground cinnamon to the banana mixture. Mix well.
  4. Incorporate the oats into the banana mixture, stirring until evenly distributed.
  5. Pour in the almond milk, and gently fold in your choice of raisins, nuts, or dark chocolate chunks.
  6. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  7. Scoop spoonfuls of the cookie mixture onto the baking sheet, flattening them slightly.
  8. Bake in the oven for 15-20 minutes until the cookies are firm and lightly golden.
  9. Cool the cookies on the baking sheet for a few minutes, then transfer them to a wire rack.
  10. Serve these delightful treats once cooled and enjoy guilt-free!
