- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 3 cups beef broth
- 1 cup frozen green beans
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Optional: Fresh parsley, chopped, for garnish
Instructions
- In a large pot over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
- Add the diced onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is softened.
- Stir in the carrots, celery, and potatoes, and cook for another 3 minutes.
- Pour in the beef broth and diced tomatoes. Add oregano, salt, and black pepper. Bring to a boil.
- Reduce heat to a simmer. Cover and cook for 20 minutes, or until vegetables are tender.
- Stir in the frozen green beans and cook for an additional 5 minutes. Taste and adjust seasoning as needed before serving.
Notes
- For a richer flavor, use fire-roasted diced tomatoes.
- Add a bay leaf while simmering for extra depth, but remember to remove before serving.
- For a thicker soup, mash some of the potatoes in the pot or stir in a slurry of 1 tbsp cornstarch mixed with 2 tbsp cold water during the last 5 minutes of simmering.
