Description

A hearty and comforting hamburger soup made with ground beef, vegetables, and savory broth. It’s a quick and easy family dinner option.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups beef broth
  • 1 cup frozen green beans
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
  2. Add the diced onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is softened.
  3. Stir in the carrots, celery, and potatoes, and cook for another 3 minutes.
  4. Pour in the beef broth and diced tomatoes. Add oregano, salt, and black pepper. Bring to a boil.
  5. Reduce heat to a simmer. Cover and cook for 20 minutes, or until vegetables are tender.
  6. Stir in the frozen green beans and cook for an additional 5 minutes. Taste and adjust seasoning as needed before serving.

Notes

  • For a richer flavor, use fire-roasted diced tomatoes.
  • Add a bay leaf while simmering for extra depth, but remember to remove before serving.
  • For a thicker soup, mash some of the potatoes in the pot or stir in a slurry of 1 tbsp cornstarch mixed with 2 tbsp cold water during the last 5 minutes of simmering.
