  • 4 cups green beans (fresh, trimmed, cut into 1-inch pieces)
  • 2 medium potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups broth (chicken or vegetable, low-sodium recommended)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon parsley (fresh, chopped or 1 tsp dried)
  • 1 teaspoon thyme (dried or fresh)
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Prepare Ingredients: Begin by dicing the ham and cutting the green beans into 1-inch pieces. Peel and dice the potatoes, and chop the onion and garlic.
  2. Layer in Crockpot: Place the diced ham at the bottom of your slow cooker, followed by layers of green beans, potatoes, onion, and garlic.
  3. Add Broth and Seasonings: Pour in 4 cups of broth until the ingredients are just submerged. Sprinkle in parsley, thyme, salt, and pepper to taste.
  4. Cook: Cover your crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  5. Adjust Seasoning: Once cooked, taste and adjust the seasoning if necessary before serving.
  6. Serve: Ladle into bowls and garnish with extra apple cider vinegar on the side.
