Description

A wholesome and savory dinner featuring juicy grilled chicken and roasted broccoli on a bed of rice, served with a rich and creamy garlic sauce.


Ingredients

  • 2 boneless skinless chicken breasts
  • 3 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 cups cooked brown rice
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat grill to medium-high heat. In a small bowl, combine olive oil, smoked paprika, salt, and pepper. Brush the mixture over chicken breasts.
  2. Grill chicken for 6-8 minutes per side, or until fully cooked and juices run clear. Transfer to a cutting board and let rest for 5 minutes before slicing.
  3. Toss broccoli florets with a drizzle of olive oil, salt, and pepper. Grill or roast for 10-12 minutes until tender and slightly charred.
  4. In a small bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lemon juice, and parsley to make the creamy garlic sauce. Season with salt and pepper to taste.
  5. Assemble bowls by dividing cooked rice among 4 bowls. Top each with sliced grilled chicken and broccoli. Drizzle with creamy garlic sauce and serve.
