- 1/2 cup granulated sugar

- 2 large eggs

- 1 cup whipped cream
Instructions
- In a bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until achieving a sand-like texture. Press firmly into the bottom of mini cupcake liners or a mini cheesecake pan. Bake at 350°F for 8-10 minutes until golden brown.
- In a large mixing bowl, beat softened cream cheese until smooth and creamy. Gradually add granulated sugar and vanilla extract, mixing well. Incorporate the eggs one at a time, blending until just combined.
- Spoon the cheesecake mixture evenly into each crust, filling just below the top. Bake at 325°F for 20-25 minutes until the edges are set but slightly jiggly in the center. Let cool completely on a wire rack.
- Top each mini cheesecake with whipped cream and finish with your favorite fruit or candy toppings.
