Instructions
- Prepare Plantains: Peel and cut the plantains into 1-2 inch pieces. Boil them in salted water for about 10-15 minutes, or fry until golden.
- Mash Mofongo: Use a mortar and pestle to mash cooked plantains with minced garlic, olive oil, and optional chicharrón. Season with salt and pepper.
- Cook Garlic Shrimp: In a skillet, heat olive oil. Sauté minced garlic, then add the shrimp. Season and cook until shrimp are pink and opaque.
- Assemble Dish: Mold the mofongo into bowls or onto plates. Top with garlic shrimp and drizzle with pan juices.
- Serve: Garnish with fresh cilantro or lime wedges. Serve immediately.
