Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Pat chicken dry with paper towels. Season chicken with salt and pepper.
  2. Dredge chicken in flour, shaking off excess.
  3. Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-high heat.
  4. Sear chicken for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  5. Add remaining 2 tablespoons butter and 1 tablespoon olive oil to the skillet. Reduce heat to medium.
  6. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  7. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  8. Return chicken to the skillet. Spoon the garlic butter sauce over the chicken.
  9. Stir in fresh parsley and lemon juice (if using). Serve this garlic butter chicken immediately.
