- 1 1/2 pounds boneless, skinless chicken breasts or thighs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh lemon juice (optional)
Instructions
- Pat chicken dry with paper towels. Season chicken with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-high heat.
- Sear chicken for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add remaining 2 tablespoons butter and 1 tablespoon olive oil to the skillet. Reduce heat to medium.
- Add minced garlic and cook for 1 minute until fragrant, being careful not to burn.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return chicken to the skillet. Spoon the garlic butter sauce over the chicken.
- Stir in fresh parsley and lemon juice (if using). Serve this garlic butter chicken immediately.
