  • 1 cup almond flour

  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sliced almonds for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. In a large bowl, whisk together eggs, granulated sugar, brown sugar, melted butter, milk, and vanilla extract until smooth.
  3. In a separate bowl, combine almond flour, all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  4. Slowly mix the dry ingredients into the wet ingredients, stirring until fully combined.
  5. Fold in the chopped figs and dates gently with a spatula.
