Description

Dump And Bake Chicken Tzatziki Rice is a delicious one-pan meal perfect for busy weeknights.


Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 4 pieces Boneless Skinless Chicken Breasts
  • 1 cup Greek Yogurt
  • 1 medium Cucumber
  • 2 cloves Garlic
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Fresh Herbs (Dill, Oregano)
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Black Pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spread uncooked long grain white rice evenly in a 9×13 inch baking dish, then pour chicken broth over the rice without stirring.
  3. Combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, paprika, salt, and black pepper in a bowl. Mix until smooth and creamy.
  4. Pat chicken breasts dry, drizzle with olive oil, and place them on top of the rice.
  5. Spread the tzatziki sauce generously over each chicken breast.
  6. Cover the baking dish tightly with aluminum foil and bake for 50-60 minutes, until the chicken is cooked through and the rice is tender.
  7. Allow the dish to rest for 5 minutes before serving.
