- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 4 pieces Boneless Skinless Chicken Breasts
- 1 cup Greek Yogurt
- 1 medium Cucumber
- 2 cloves Garlic
- 2 tablespoons Lemon Juice
- 2 tablespoons Fresh Herbs (Dill, Oregano)
- 1 teaspoon Paprika
- to taste Salt
- to taste Black Pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Spread uncooked long grain white rice evenly in a 9×13 inch baking dish, then pour chicken broth over the rice without stirring.
- Combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, paprika, salt, and black pepper in a bowl. Mix until smooth and creamy.
- Pat chicken breasts dry, drizzle with olive oil, and place them on top of the rice.
- Spread the tzatziki sauce generously over each chicken breast.
- Cover the baking dish tightly with aluminum foil and bake for 50-60 minutes, until the chicken is cooked through and the rice is tender.
- Allow the dish to rest for 5 minutes before serving.
