Description

Duchess Potatoes are an elegant and creamy side dish, perfect for enhancing any meal with their beautiful presentation.


Ingredients

  • 2 pounds starchy potatoes (Russet or Yukon Gold)
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 2 large egg yolks
  • to taste salt
  • to taste pepper
  • to taste fresh herbs (optional)

Instructions

  1. Peel and chop the starchy potatoes into even chunks. Boil them in salted water until fork-tender, about 15-20 minutes, then drain and let them cool slightly to steam off excess moisture.
  2. Once cooled, mash the potatoes until smooth with a potato masher or ricer. Be careful not to over-mix; a fluffy texture is what you want, not a gummy one!
  3. Add in the unsalted butter, heavy cream, and egg yolks, mixing gently until everything is fully incorporated. The mixture should be smooth and creamy.
  4. Sprinkle in salt and pepper to taste, along with any optional herbs you desire. Give it a taste to ensure the flavors are just right for your palate!
  5. Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe into beautiful swirls on a lined baking sheet.
  6. Place in a preheated oven at 400°F (200°C) and bake for 20-25 minutes or until they develop a lovely golden-brown color on top.
