- 2 pounds starchy potatoes (Russet or Yukon Gold)
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 2 large egg yolks

Instructions
- Peel and chop the starchy potatoes into even chunks. Boil them in salted water until fork-tender, about 15-20 minutes, then drain and let them cool slightly to steam off excess moisture.
- Once cooled, mash the potatoes until smooth with a potato masher or ricer. Be careful not to over-mix; a fluffy texture is what you want, not a gummy one!
- Add in the unsalted butter, heavy cream, and egg yolks, mixing gently until everything is fully incorporated. The mixture should be smooth and creamy.
- Sprinkle in salt and pepper to taste, along with any optional herbs you desire. Give it a taste to ensure the flavors are just right for your palate!
- Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe into beautiful swirls on a lined baking sheet.
- Place in a preheated oven at 400°F (200°C) and bake for 20-25 minutes or until they develop a lovely golden-brown color on top.
