- 1 pound cooking apples
- 1/2 cup water
- 2 tablespoons brown sugar
- 1 teaspoon lemon rind, finely grated
- 1 tablespoon orange blossom water or cinnamon
- 1 tablespoon fine-cut orange marmalade

Instructions
- Preheat your oven to 400°F. Grease and flour a baking sheet or line it with parchment.
- Prepare the apples by peeling, coring, and slicing them. Stew the apples in 1/2 cup of water until tender, about 10-15 minutes. Drain and let cool completely.
- Mix cooled apples in a bowl with brown sugar, lemon rind, marmalade, and optional orange blossom water or cinnamon. Adjust flavors to your preference.
- Roll out the pastry on a lightly floured surface until about 1/8 inch thick. Cut into 8 squares, each about 4 inches wide.
- Place a line of the apple mixture down the center of each square, leaving space at the ends for sealing.
- Dampen the edges of the pastry squares with reserved apple cooking liquid.
- Fold the edges over the filling, creating a tube shape. Pinch and seal the edges with a fork.
- Seal the ends of each pastry tube with the fork.
- Brush the tops with reserved apple cooking liquid and sprinkle with caster sugar.
- Cut vents into the top of each pastry with a sharp knife.
- Bake for 20-25 minutes, or until golden brown.
- Serve warm with extra marmalade or candied orange peel.
