Description

Irresistible Dark Chocolate Oatmeal Cups for Easy Mornings

Ingredients

Scale
  • 2 cups Old-Fashioned Oats (Quick oats can be used but may change the cup’s structure.)
  • 1/2 cup Peanut Butter (Can substitute with almond butter.)
  • 1/4 cup Honey (For vegan option, substitute with maple syrup.)
  • 1 cup Dark Chocolate (60-70% cacao) (Avoid unsweetened chocolate.)
  • 2 tablespoons Coconut Oil (Vegetable oil can be substituted.)
  • 1 teaspoon Flaky Sea Salt (Optional but recommended.)

Instructions

  1. Heat your peanut butter and honey over medium-low heat until warm and combined. Stir frequently to ensure it doesn’t get too hot.
  2. In a large bowl, mix the warm peanut butter mixture with old-fashioned oats until every oat is fully coated.
  3. Scoop about 1/3 cup of the mixture into a greased muffin pan. Press down firmly to shape each cup.
  4. In a saucepan, gently heat the dark chocolate with coconut oil on low, stirring continuously until it’s melted and smooth.
  5. Spoon about 1 tablespoon of the melted chocolate over each oat cup, covering generously.
  6. Place the muffin pan in the freezer for at least 1 hour.
  7. Carefully pop out each oatmeal cup, sprinkle with flaky sea salt (if desired), and enjoy your wholesome yet indulgent treat!
