Irresistible Dark Chocolate Oatmeal Cups for Easy Mornings
Ingredients

- 2 cups Old-Fashioned Oats (Quick oats can be used but may change the cup’s structure.)
- 1/2 cup Peanut Butter (Can substitute with almond butter.)
- 1/4 cup Honey (For vegan option, substitute with maple syrup.)
- 1 cup Dark Chocolate (60-70% cacao) (Avoid unsweetened chocolate.)
- 2 tablespoons Coconut Oil (Vegetable oil can be substituted.)
- 1 teaspoon Flaky Sea Salt (Optional but recommended.)
Instructions
- Heat your peanut butter and honey over medium-low heat until warm and combined. Stir frequently to ensure it doesn’t get too hot.
- In a large bowl, mix the warm peanut butter mixture with old-fashioned oats until every oat is fully coated.
- Scoop about 1/3 cup of the mixture into a greased muffin pan. Press down firmly to shape each cup.
- In a saucepan, gently heat the dark chocolate with coconut oil on low, stirring continuously until it’s melted and smooth.
- Spoon about 1 tablespoon of the melted chocolate over each oat cup, covering generously.
- Place the muffin pan in the freezer for at least 1 hour.
- Carefully pop out each oatmeal cup, sprinkle with flaky sea salt (if desired), and enjoy your wholesome yet indulgent treat!
