  • 1 medium onion, diced

  • 2 tablespoons yellow curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can pure pumpkin puree
  • 3 cups vegetable broth
  • 1 (14-ounce) can full-fat coconut milk
  • 1 tablespoon maple syrup or honey
  • Salt and black pepper, to taste
  • Juice of 1/2 lime
  • Fresh cilantro, pumpkin seeds, and coconut cream for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until soft, about 3-4 minutes.
  2. Stir in garlic and ginger; cook for 1-2 minutes until fragrant.
  3. Add curry powder, cumin, and cayenne pepper. Stir constantly for 1 minute to toast the spices.
  4. Add pumpkin puree and vegetable broth. Mix well and bring to a gentle boil.
  5. Reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally.
  6. Pour in coconut milk and maple syrup or honey. Stir and simmer for another 5 minutes.
  7. Use an immersion blender to blend the soup until smooth and creamy. If using a standard blender, blend in batches carefully.
  8. Stir in lime juice, salt, and pepper to taste. Adjust seasoning as needed.
  9. Ladle into bowls and garnish with cilantro, pumpkin seeds, and coconut cream, if desired.
