- 3 lb baby red potatoes
- Salt
- Pepper
- 1 onion
- 3 cloves garlic
- 8–10 slices bacon
- 1 oz envelope ranch seasoning mix
- 6 tablespoons butter
- 1 ½ cups shredded Colby Jack cheese
- Chopped green onions or chives
Instructions
- In a skillet over medium heat, cook the bacon until it’s nice and crisp. Once done, chop it into small pieces and set aside.
- Lightly grease your Crockpot, then layer in the halved baby red potatoes, diced onion, minced garlic, and chopped bacon.
- Sprinkle the ranch seasoning mix evenly over everything. Add 1 cup of shredded Colby Jack cheese, dollops of butter, and sprinkle with salt and pepper.
- Cover your Crockpot and cook on low for 6–8 hours or on high for 3–4 hours.
- Once cooked, stir all the ingredients together. Top with the remaining ½ cup of cheese, cover, and let sit for about 5 minutes, until the cheese is melted.
- Before serving, sprinkle chopped green onions or chives on top.
