Description

This dish is a comforting and flavorful blend of potatoes, ranch seasoning, and bacon, perfect for any dinner setting.


Ingredients

  • 3 lb baby red potatoes
  • Salt
  • Pepper
  • 1 onion
  • 3 cloves garlic
  • 810 slices bacon
  • 1 oz envelope ranch seasoning mix
  • 6 tablespoons butter
  • 1 ½ cups shredded Colby Jack cheese
  • Chopped green onions or chives

Instructions

  1. In a skillet over medium heat, cook the bacon until it’s nice and crisp. Once done, chop it into small pieces and set aside.
  2. Lightly grease your Crockpot, then layer in the halved baby red potatoes, diced onion, minced garlic, and chopped bacon.
  3. Sprinkle the ranch seasoning mix evenly over everything. Add 1 cup of shredded Colby Jack cheese, dollops of butter, and sprinkle with salt and pepper.
  4. Cover your Crockpot and cook on low for 6–8 hours or on high for 3–4 hours.
  5. Once cooked, stir all the ingredients together. Top with the remaining ½ cup of cheese, cover, and let sit for about 5 minutes, until the cheese is melted.
  6. Before serving, sprinkle chopped green onions or chives on top.
