- 1 (14.5 oz) can diced tomatoes, undrained
- 3 tbsp fajita seasoning
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lime
- 8 small flour or corn tortillas
- Toppings: fresh cilantro, sliced avocado, shredded cheese, salsa, sour cream (optional)
Instructions
- Place sliced onions and bell peppers at the bottom of your crockpot. Arrange chicken breasts on top of the veggies. Sprinkle fajita seasoning, smoked paprika, garlic powder, salt, and black pepper evenly over the chicken. Pour the undrained diced tomatoes over everything.
- Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until the chicken is fully cooked and shreds easily.
- Remove chicken breasts and shred them with two forks. Return shredded chicken to the crockpot, stirring to coat in the juices. Add lime juice and cook for an additional 10-15 minutes on low.
- Warm tortillas according to package instructions. Fill tortillas with the crockpot fajita mixture and add your favorite toppings.
