Description
Learn how to make Crispy Sesame Balls – Jian Dui, a delightful and gluten-free treat perfect for festive occasions.
Ingredients
Scale
- 2 cups Glutinous Rice Flour
- 2 tablespoons Granulated Sugar (or coconut sugar)
- 1 cup Water (boiling)
- 2 tablespoons Neutral Oil (or coconut oil)
- 1 cup Roasted Unsalted Peanuts
- 1/2 cup Unsalted Creamy Peanut Butter (or almond butter)
- 3 tablespoons Maple Syrup (or honey/agave syrup)
- 1 cup Raw White Sesame Seeds (toasted optional)
Instructions
- Prepare the Dough: In a bowl, mix glutinous rice flour with boiling water and granulated sugar. Stir until a shaggy dough forms. Knead until smooth, then incorporate neutral oil and cover, allowing it to rest for 15 minutes.
- Make the Filling: Finely grind the roasted unsalted peanuts and combine them with unsalted creamy peanut butter and maple syrup. Refrigerate this mixture for 10 minutes to firm up. Once chilled, divide into 10 equal portions and roll into delightful balls.
- Assemble the Balls: Grease your palms with oil to prevent sticking. Flatten pieces of dough into small discs, place a filling ball in the center, and carefully seal the edges, rolling them into smooth balls.
- Set Up Dipping Station: Place bowls of water and raw white sesame seeds on your prep surface, readying them for the final coating process.
- Fry or Air Fry: Heat oil to 300°F (150°C) for frying. Fry the balls in batches for 5-7 minutes or until golden brown. Increase the heat to 325°F (160°C) and fry for an additional 3-5 minutes. If air frying, preheat to 325°F (160°C) and air-fry for 8-12 minutes, turning halfway for even cooking.
