Crispy Jian Dui are addictive sesame balls that combine a crunchy exterior with a chewy interior, perfect for celebrations.
Ingredients

- 2 cups Glutinous Rice Flour
- 1 pinch Fine Salt
- 1 cup Boiling Water
- 1 cup Granulated Sugar
- 1 cup Sweetened Red Bean Paste
- 1 cup Raw White Sesame Seeds
- 4 cups Vegetable Oil
Instructions
- In a mixing bowl, combine glutinous rice flour and fine salt thoroughly.
- Dissolve granulated sugar in boiling water in a heatproof cup, stirring until completely dissolved.
- Gradually add the hot sugar water to the flour mixture while stirring continuously until a smooth dough forms.
- Knead the dough for about 2 minutes until smooth and elastic, then let it rest covered for 30 minutes.
- Portion the rested dough into tablespoon-sized pieces, flatten each, fill with red bean paste, and seal tightly.
- Roll each ball in raw sesame seeds until evenly coated.
- Heat vegetable oil in a deep pan to 350°F and fry the Jian Dui until golden brown, approximately 6 minutes.
- Drain on a wire rack and serve warm or at room temperature.
Notes
- Use boiling hot water for the best texture.
- Can substitute granulated sugar with coconut sugar or maple syrup.
