Description

Crispy Jian Dui are addictive sesame balls that combine a crunchy exterior with a chewy interior, perfect for celebrations.


Ingredients

Scale
  • 2 cups Glutinous Rice Flour
  • 1 pinch Fine Salt
  • 1 cup Boiling Water
  • 1 cup Granulated Sugar
  • 1 cup Sweetened Red Bean Paste
  • 1 cup Raw White Sesame Seeds
  • 4 cups Vegetable Oil

Instructions

  1. In a mixing bowl, combine glutinous rice flour and fine salt thoroughly.
  2. Dissolve granulated sugar in boiling water in a heatproof cup, stirring until completely dissolved.
  3. Gradually add the hot sugar water to the flour mixture while stirring continuously until a smooth dough forms.
  4. Knead the dough for about 2 minutes until smooth and elastic, then let it rest covered for 30 minutes.
  5. Portion the rested dough into tablespoon-sized pieces, flatten each, fill with red bean paste, and seal tightly.
  6. Roll each ball in raw sesame seeds until evenly coated.
  7. Heat vegetable oil in a deep pan to 350°F and fry the Jian Dui until golden brown, approximately 6 minutes.
  8. Drain on a wire rack and serve warm or at room temperature.

Notes

  • Use boiling hot water for the best texture.
  • Can substitute granulated sugar with coconut sugar or maple syrup.
