Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cups fresh spinach (about 120 g)
  • 4 ounces feta cheese, crumbled (about 115 g)
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Bring salted water to a boil, add gnocchi, and cook until they float (about 2–3 minutes). Drain.
  2. In a skillet, heat olive oil, sauté garlic for 30 seconds, then add spinach and cook until wilted (3–4 minutes). Season.
  3. Add boiled gnocchi to the skillet, toss to combine, and let cook undisturbed until crispy (3–4 minutes).
  4. Sprinkle feta over the mixture, fold gently, and cook for another 2–3 minutes.
  5. Serve in bowls, garnished with additional feta or red pepper flakes if desired.
