- 2 tablespoons olive oil
- 4 cups fresh spinach (about 120 g)
- 4 ounces feta cheese, crumbled (about 115 g)
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon red pepper flakes (optional)
Instructions
- Bring salted water to a boil, add gnocchi, and cook until they float (about 2–3 minutes). Drain.
- In a skillet, heat olive oil, sauté garlic for 30 seconds, then add spinach and cook until wilted (3–4 minutes). Season.
- Add boiled gnocchi to the skillet, toss to combine, and let cook undisturbed until crispy (3–4 minutes).
- Sprinkle feta over the mixture, fold gently, and cook for another 2–3 minutes.
- Serve in bowls, garnished with additional feta or red pepper flakes if desired.
