Description

A delightful dish featuring crispy pan-fried gnocchi combined with fresh spinach and tangy feta cheese, perfect for a comforting weeknight meal.

Ingredients

Scale
  • 1 (16 ounce) package potato gnocchi
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 5 ounces fresh spinach
  • 4 ounces feta cheese, crumbled
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the gnocchi to the skillet in a single layer. Cook for 5-7 minutes, or until golden brown and crispy on one side.
  3. Flip the gnocchi and cook for another 3-5 minutes until browned and heated through.
  4. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Add the spinach to the skillet. Cook, stirring, until the spinach is wilted, about 2-3 minutes.
  6. Stir in the crumbled feta cheese.
  7. Season with salt and pepper to taste.
  8. Serve immediately.

Notes

  • For extra crispy gnocchi, ensure the skillet is hot before adding them.
  • You can add a pinch of red pepper flakes for a touch of heat.
  • Other cheeses like Parmesan or goat cheese can be substituted for feta.
