A creamy vanilla slice with flaky puff pastry, featuring layers of crisp, buttery pastry and a luscious vanilla custard.

- 2 sheets puff pastry
- 1 cup milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unfold the puff pastry sheets and place them on the prepared baking sheet. Prick the pastry all over with a fork.
- Bake for 15-20 minutes, or until golden brown and puffed. Let cool completely.
- While the pastry cools, prepare the vanilla custard. In a medium saucepan, whisk together milk, sugar, and cornstarch until smooth.
- Whisk in the egg yolks. Cook over medium heat, whisking constantly, until the custard thickens, about 5-7 minutes.
- Remove from heat and stir in the butter and vanilla extract until the butter is melted and incorporated.
- Pour the custard into a clean bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Let cool to room temperature, then chill in the refrigerator for at least 2 hours.
- Once the pastry is cool and the custard is chilled, assemble the vanilla slice. Cut one sheet of baked pastry in half horizontally to create two thinner layers.
- Spread the chilled vanilla custard evenly over one of the pastry layers.
- Top with the second pastry layer.
- Dust the top with powdered sugar before serving.
Notes
- For extra flaky pastry, ensure your puff pastry is very cold when you start.
- Whip the custard with an electric mixer for a lighter, creamier texture.
- Chill the vanilla slice for at least 30 minutes before slicing for cleaner cuts.
