Description

A creamy vanilla slice with flaky puff pastry, featuring layers of crisp, buttery pastry and a luscious vanilla custard.


Ingredients

  • 2 sheets puff pastry
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheets and place them on the prepared baking sheet. Prick the pastry all over with a fork.
  3. Bake for 15-20 minutes, or until golden brown and puffed. Let cool completely.
  4. While the pastry cools, prepare the vanilla custard. In a medium saucepan, whisk together milk, sugar, and cornstarch until smooth.
  5. Whisk in the egg yolks. Cook over medium heat, whisking constantly, until the custard thickens, about 5-7 minutes.
  6. Remove from heat and stir in the butter and vanilla extract until the butter is melted and incorporated.
  7. Pour the custard into a clean bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Let cool to room temperature, then chill in the refrigerator for at least 2 hours.
  8. Once the pastry is cool and the custard is chilled, assemble the vanilla slice. Cut one sheet of baked pastry in half horizontally to create two thinner layers.
  9. Spread the chilled vanilla custard evenly over one of the pastry layers.
  10. Top with the second pastry layer.
  11. Dust the top with powdered sugar before serving.

Notes

  • For extra flaky pastry, ensure your puff pastry is very cold when you start.
  • Whip the custard with an electric mixer for a lighter, creamier texture.
  • Chill the vanilla slice for at least 30 minutes before slicing for cleaner cuts.
