- 1.5 lbs salmon fillets
- 1 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1.5 cups heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 3 cups fresh spinach
- Salt and pepper to taste
Instructions
- Pat salmon dry and season with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear salmon for 3-4 minutes per side until golden brown. Remove salmon from skillet and set aside.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in chopped sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
- Stir in grated Parmesan cheese until melted and the sauce thickens.
- Add fresh spinach and stir until wilted. Season with salt and pepper.
- Return salmon to the skillet and spoon the sauce over it.
- Simmer for 2-3 minutes until salmon is cooked through.
- Serve your delicious Tuscan salmon immediately.
