Description

This Creamy Tuscan Salmon recipe features succulent, flaky salmon in a luscious garlic cream sauce with sun-dried tomatoes and spinach. It’s an elegant yet easy dish perfect for weeknights or special occasions.


Ingredients

  • 1.5 lbs salmon fillets
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Pat salmon dry and season with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear salmon for 3-4 minutes per side until golden brown. Remove salmon from skillet and set aside.
  4. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Stir in chopped sun-dried tomatoes and cook for another minute.
  6. Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
  7. Stir in grated Parmesan cheese until melted and the sauce thickens.
  8. Add fresh spinach and stir until wilted. Season with salt and pepper.
  9. Return salmon to the skillet and spoon the sauce over it.
  10. Simmer for 2-3 minutes until salmon is cooked through.
  11. Serve your delicious Tuscan salmon immediately.

  • For a healthier option, you can use half-and-half instead of heavy cream.
  • Add a squeeze of lemon juice at the end for extra brightness.
  • Serve with pasta, rice, or crusty bread to soak up the creamy Tuscan sauce.
