Description

Creamy Garlic Shrimp Over Mashed Potatoes is an indulgent comfort food dish featuring tender shrimp in a velvety garlic-Parmesan cream sauce served over rich, buttery mashed potatoes. It offers a delightful balance of flavors and textures, making it perfect for special occasions or a cozy dinner.

Ingredients

  • Shrimp: 1 lb large shrimp, peeled and deveined
  • Olive Oil: 2 tablespoons
  • Paprika: 1 teaspoon
  • Garlic Powder: 1 teaspoon
  • Salt and Pepper: to taste
  • Butter: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Heavy Cream: 1 cup
  • Parmesan Cheese: ½ cup grated
  • Dijon Mustard: 1 teaspoon (optional)
  • Fresh Thyme Leaves: for garnish
  • Potatoes: 2 lbs, peeled and cubed
  • Milk: ½ cup warm
  • Butter: ¼ cup
  • Salt: to taste

Instructions

  1. Prepare Mashed Potatoes: Boil cubed potatoes in salted water until fork-tender. Drain and return to the pot. Add butter and warm milk, then mash until smooth. Season with salt and cover to keep warm.
  2. Cook Shrimp: Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink. Set aside.
  3. Make Sauce: In the same skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream and bring to a simmer. Stir in Parmesan cheese and Dijon mustard until melted and creamy. Season with salt and pepper. Simmer for 3–5 minutes until slightly thickened.
  4. Assemble Dish: Spoon mashed potatoes onto plates. Top with cooked shrimp and generously pour the garlic cream sauce over everything. Garnish with fresh thyme leaves.

Notes

  • For a dairy-free version, use plant-based butter, coconut cream or oat milk instead of heavy cream, and nutritional yeast for a cheesy flavor.
  • Swap mashed potatoes for cauliflower mash for a low-carb option.
  • This recipe works well with scallops, chicken, or tofu.
  • Add crushed red pepper flakes for a spicy kick.
  • Serve with a crisp white wine like Sauvignon Blanc or Chardonnay.
  • Pairs well with sautéed spinach, roasted asparagus, or a fresh salad.
