Ingredients

  • 1lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1lb potato gnocchi
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Pat chicken dry, cut into bite-sized pieces, and season generously with salt and pepper. Mince 6 cloves of garlic. Grate Parmesan cheese.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken in a single layer and sear for 3-4 minutes per side until golden brown and cooked through. Transfer the chicken to a clean plate and set aside.
  3. Reduce heat to medium. Add the remaining 1 tablespoon of olive oil to the skillet. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the dried Italian seasoning for another 30 seconds.
  4. Pour in 1 cup of chicken broth. Increase heat to medium-high and bring to a simmer. Scrape the bottom of the skillet to loosen browned bits. Let simmer for 2-3 minutes.
  5. Add 1lb potato gnocchi to the simmering broth. Pour in 1 cup of heavy cream. Stir gently to combine. Bring to a gentle simmer again and reduce heat to medium-low. Cook uncovered for 5-7 minutes until gnocchi are tender and sauce thickens.
  6. Return seared chicken to the skillet, folding gently into the sauce. Remove from heat. Stir in ½ cup of grated Parmesan cheese until fully melted. Adjust seasoning as needed.
  7. Let the skillet rest for 2-3 minutes off the heat. Divide the Garlic Chicken Gnocchi among serving plates. Garnish with fresh basil leaves and offer extra grated Parmesan cheese at the table.
