Classic Crockpot Pierogi Casserole With Kielbasa

- 3 packages Mrs. T’s Cheddar Pierogies
- 1 lb beef kielbasa, sliced
- 3 cups chicken broth
- 1 block (8 oz) cream cheese
- 1 cup shredded cheddar cheese
- salt, to taste
- pepper, to taste
- 1 cup shredded cheddar cheese
Instructions
- Slice the 1 lb beef kielbasa into ½-inch thick rounds. Set aside.
- In a medium bowl, combine the 3 cups chicken broth and 1 block (8 oz) cream cheese. Whisk thoroughly until smooth and creamy. Season with salt and pepper to taste.
- Lightly grease the inside of a 6-quart or larger slow cooker insert with cooking spray or butter to prevent sticking.
- Arrange half of the frozen pierogies in an even layer at the bottom of the slow cooker. Spread half of the sliced beef kielbasa over the pierogies. Sprinkle 1 cup of the shredded cheddar cheese over the kielbasa. Carefully pour half of the whisked creamy sauce mixture evenly over the cheese.
- Repeat the layers: place the remaining half of the frozen pierogies over the sauce layer, followed by the remaining sliced beef kielbasa. Sprinkle the remaining 1 cup of shredded cheddar cheese over this layer. Finally, pour the rest of the creamy sauce over the entire casserole, ensuring good coverage.
- Secure the lid tightly on your slow cooker. Cook on the LOW setting for 4-5 hours or on HIGH for 2-3 hours, until the pierogies are completely tender when pierced with a fork, and the sauce is bubbly and thickened.
- Once cooked, turn off the slow cooker and let the casserole rest, covered, for about 10-15 minutes. This allows the sauce to set further, making it easier to serve.
