Classic Crockpot Pierogi Casserole With Kielbasa


Ingredients

  • 3 packages Mrs. T’s Cheddar Pierogies
  • 1 lb beef kielbasa, sliced
  • 3 cups chicken broth
  • 1 block (8 oz) cream cheese
  • 1 cup shredded cheddar cheese
  • salt, to taste
  • pepper, to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Slice the 1 lb beef kielbasa into ½-inch thick rounds. Set aside.
  2. In a medium bowl, combine the 3 cups chicken broth and 1 block (8 oz) cream cheese. Whisk thoroughly until smooth and creamy. Season with salt and pepper to taste.
  3. Lightly grease the inside of a 6-quart or larger slow cooker insert with cooking spray or butter to prevent sticking.
  4. Arrange half of the frozen pierogies in an even layer at the bottom of the slow cooker. Spread half of the sliced beef kielbasa over the pierogies. Sprinkle 1 cup of the shredded cheddar cheese over the kielbasa. Carefully pour half of the whisked creamy sauce mixture evenly over the cheese.
  5. Repeat the layers: place the remaining half of the frozen pierogies over the sauce layer, followed by the remaining sliced beef kielbasa. Sprinkle the remaining 1 cup of shredded cheddar cheese over this layer. Finally, pour the rest of the creamy sauce over the entire casserole, ensuring good coverage.
  6. Secure the lid tightly on your slow cooker. Cook on the LOW setting for 4-5 hours or on HIGH for 2-3 hours, until the pierogies are completely tender when pierced with a fork, and the sauce is bubbly and thickened.
  7. Once cooked, turn off the slow cooker and let the casserole rest, covered, for about 10-15 minutes. This allows the sauce to set further, making it easier to serve.
