Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with cooking spray.
- Cream together the butter and cream cheese in a mixing bowl until smooth and fluffy.
- Gradually add the sugar, mixing until the mixture is light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract and optional orange zest.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry mixture to the creamed butter mixture, stirring gently.
- Fold in the fresh (or soaked dried) cranberries carefully.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 1 hour or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a cooling rack.
