Description

This Cream Cheese Cranberry Loaf is a moist and vibrant treat perfect for cozy gatherings and holiday brunches.


Ingredients

  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 1 cup Sugar (or coconut sugar/erythritol)
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1/2 cup Unsalted Butter (or coconut oil/margarine)
  • 8 oz Cream Cheese
  • 1/2 cup Milk (or any plant-based milk)
  • 2 cups Fresh Cranberries (or dried cranberries soaked in warm water)
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Orange Zest (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with cooking spray.
  2. Cream together the butter and cream cheese in a mixing bowl until smooth and fluffy.
  3. Gradually add the sugar, mixing until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract and optional orange zest.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry mixture to the creamed butter mixture, stirring gently.
  7. Fold in the fresh (or soaked dried) cranberries carefully.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a cooling rack.
