Description

A refreshing and flavorful salad featuring mixed greens, red onion, dried cranberries, pecans, and creamy goat cheese, all tossed in a maple balsamic dressing. This quick and easy salad is naturally gluten-free and vegetarian, making it perfect for any occasion.


Ingredients

  • 4 cups Baby Mixed Greens
  • 1/4 cup Red Onion, thinly sliced
  • 1/4 cup Dried Cranberries
  • 1/4 cup Candied Pecans or Walnuts
  • 2 oz Soft Goat Cheese
  • 1 tsp Extra-Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1.5 tbsp Mayonnaise
  • 1/2 tbsp Pure Maple Syrup
  • 1/4 tsp Kosher Salt
  • Black Pepper to taste

Instructions

  1. In a large mixing bowl, whisk together the extra-virgin olive oil, balsamic vinegar, mayonnaise, maple syrup, kosher salt, and black pepper until fully combined and smooth.
  2. Add the baby mixed greens to the dressing and gently toss them using tongs until they are evenly coated.
  3. Sprinkle the sliced red onion, dried cranberries, and candied pecans or walnuts on top of the mixed greens.
  4. Crumble the soft goat cheese over the top of the salad and gently toss the ingredients together.
  5. Divide the salad into two serving bowls or plates and serve immediately to enjoy freshness.
