- 4 cups Baby Mixed Greens
- 1/4 cup Red Onion, thinly sliced
- 1/4 cup Dried Cranberries
- 1/4 cup Candied Pecans or Walnuts
- 2 oz Soft Goat Cheese
- 1 tsp Extra-Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 1.5 tbsp Mayonnaise
- 1/2 tbsp Pure Maple Syrup
- 1/4 tsp Kosher Salt
- Black Pepper to taste
Instructions
- In a large mixing bowl, whisk together the extra-virgin olive oil, balsamic vinegar, mayonnaise, maple syrup, kosher salt, and black pepper until fully combined and smooth.
- Add the baby mixed greens to the dressing and gently toss them using tongs until they are evenly coated.
- Sprinkle the sliced red onion, dried cranberries, and candied pecans or walnuts on top of the mixed greens.
- Crumble the soft goat cheese over the top of the salad and gently toss the ingredients together.
- Divide the salad into two serving bowls or plates and serve immediately to enjoy freshness.
