- 1 cup Whole Kernel Corn (Drain well)
- 1 can Creamed Corn (Or pureed corn)
- 3 large Eggs (Vital for binding)
- 1/2 cup Unsalted Butter (Melted)
- 1 tsp Salt
- 1 cup Sour Cream (Or Greek yogurt)
- 2 cups Marbled Cheddar Cheese (Divided)
- 1/2 cup Diced Jalapeños (For a spicy kick)
- 1 cup Cooked Bacon Pieces
- 1/4 cup Green Onions (For garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the ingredients in a large mixing bowl: cornbread mix, whole kernel corn, creamed corn, large eggs, melted butter, salt, sour cream, and 1.5 cups of marbled cheddar cheese. Stir gently until well mixed.
- Pour the mixture into a greased 9×13-inch baking dish.
- Sprinkle the remaining 0.5 cups of cheddar cheese over the top.
- Bake the casserole for 40 minutes until golden brown and set.
- Cool slightly before serving.
