Ingredients

  • 1 box Cornbread Mix (Any brand)
  • 1 cup Whole Kernel Corn (Drain well)
  • 1 can Creamed Corn (Or pureed corn)
  • 3 large Eggs (Vital for binding)
  • 1/2 cup Unsalted Butter (Melted)
  • 1 tsp Salt
  • 1 cup Sour Cream (Or Greek yogurt)
  • 2 cups Marbled Cheddar Cheese (Divided)
  • 1/2 cup Diced Jalapeños (For a spicy kick)
  • 1 cup Cooked Bacon Pieces
  • 1/4 cup Green Onions (For garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ingredients in a large mixing bowl: cornbread mix, whole kernel corn, creamed corn, large eggs, melted butter, salt, sour cream, and 1.5 cups of marbled cheddar cheese. Stir gently until well mixed.
  3. Pour the mixture into a greased 9×13-inch baking dish.
  4. Sprinkle the remaining 0.5 cups of cheddar cheese over the top.
  5. Bake the casserole for 40 minutes until golden brown and set.
  6. Cool slightly before serving.
