Ingredients

  • 4 cups Chicken Broth (or vegetable broth)
  • 1 cup Milk (or almond milk)
  • 1 cup Heavy Cream (or half-and-half)
  • 3 cups Corn Kernels (fresh, frozen, or canned)
  • 6 slices Bacon, diced
  • 1 large Onion, chopped
  • 1 medium Carrot, diced
  • 2 stalks Celery, diced
  • 1 lb Yukon Potatoes, diced
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper
  • 1/4 cup Chives, fresh

Instructions

  1. Cut the corn kernels from the cobs, reserving the cobs.
  2. In a large pot, combine chicken broth, milk, and heavy cream with the corn cobs. Bring to a boil, then simmer for 20 minutes.
  3. Remove and discard the corn cobs.
  4. In a Dutch oven, cook the diced bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings.
  5. Sauté the chopped onion, carrot, and celery in the bacon drippings for 7-8 minutes until soft.
  6. Add the diced Yukon potatoes, corn kernels, sea salt, black pepper, and cayenne pepper to the pot.
  7. Pour in the corn stock. Bring to a gentle boil, then simmer for 10-15 minutes until potatoes are tender.
  8. Taste and adjust seasonings. Ladle the chowder into bowls and garnish with crispy bacon bits and fresh chives.

Notes

  • For a vegetarian version, omit bacon and use smoked paprika.
  • For a dairy-free version, use almond milk and coconut milk or additional vegetable broth.
  • Optional: Drizzle with lime juice before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze for up to 3 months in freezer-safe containers.
