Ingredients

  • 1/2 cup Light Corn Syrup (Avoid substitutes as alternatives may alter texture.)
  • 1 can Condensed Milk (Use sweetened condensed milk only.)
  • 1 teaspoon Vanilla Extract (Substitution: Use maple extract for a unique twist.)
  • 2 cups Chocolate (Use semi-sweet, dark, or milk chocolate according to preference.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread 2 cups of pecans on a baking pan and toast them for 8-10 minutes until fragrant and golden brown.
  3. Chop the cooled pecans into smaller, bite-sized pieces.
  4. In a bowl, melt 6 tablespoons of butter, then mix in the light brown sugar, regular sugar, light corn syrup, and sweetened condensed milk until well combined.
  5. Heat the mixture in the microwave for about 6 minutes, stirring halfway through, and add vanilla extract after heating.
  6. Gently stir the chopped pecans into the warm caramel, coating them evenly.
  7. Allow the mixture to cool slightly, then transfer it into a baking dish and refrigerate for at least 30 minutes.
  8. Melt 2 cups of chocolate in the microwave, stirring every 30 seconds until smooth.
  9. Dip portions of the cooled caramel-pecan mixture into the melted chocolate using a fork, ensuring they’re generously coated.
  10. Place each dipped turtle on wax paper and refrigerate for another 30 minutes until the chocolate has set.
  11. Optional: Sprinkle a little sea salt on top before the chocolate sets for added flavor.
