Festive Christmas Nachos with Sausages and Bacon Bliss to Share

Ingredients

Scale
  • 1 bag Tortilla Chips
  • 1 package Sausages
  • 6 strips Streaky Bacon
  • 1 cup Cooked Chicken
  • 2 cups Melty Cheese
  • 1 small Red Onion
  • 1/2 cup Cranberry Sauce
  • 2 tablespoons Lime Juice
  • 1 teaspoon Sugar
  • 6 leaves Sage Leaves
  • 2 tablespoons Olive Oil

Instructions

  1. Prepare pickled onions: Mix diced red onion, lime juice, sugar, and a pinch of salt in a bowl. Let it sit for about 10 minutes.
  2. Preheat grill: Set your grill to medium-high heat while you line a baking tray with foil.
  3. Form meatballs: Roll the sausages into bite-sized meatballs and grill for 8-10 minutes, turning occasionally.
  4. Cook bacon: Add bacon strips to the grill and cook for 5 minutes on each side until crispy and golden.
  5. Assemble nachos: Layer tortilla chips on the baking tray. Top with sausage meatballs, cooked chicken, cranberry sauce, and cheese.
  6. Bake nachos: Preheat oven to 200°C (400°F) and bake the nachos for around 15 minutes until cheese is bubbly.
  7. Fry sage leaves: In a small pan, heat olive oil and fry sage leaves until crispy, about 1-2 minutes.
  8. Garnish and serve: Top baked nachos with pickled onions, crispy bacon, and fried sage leaves before serving.

Notes

  • Choose thick tortilla chips to avoid sogginess.
  • Plant-based sausages can be used for a vegan option.
  • Turkey bacon can be used as a lighter option.
  • Shredded turkey is a good substitute for cooked chicken.
  • Mango salsa can be used instead of cranberry sauce for a fruity twist.
  • Use fresh thyme as an alternative to sage.
