- 1 package Sausages
- 6 strips Streaky Bacon
- 1 cup Cooked Chicken
- 2 cups Melty Cheese
- 1 small Red Onion
- 1/2 cup Cranberry Sauce
- 2 tablespoons Lime Juice
- 1 teaspoon Sugar
- 6 leaves Sage Leaves
- 2 tablespoons Olive Oil
Instructions
- Prepare pickled onions: Mix diced red onion, lime juice, sugar, and a pinch of salt in a bowl. Let it sit for about 10 minutes.
- Preheat grill: Set your grill to medium-high heat while you line a baking tray with foil.
- Form meatballs: Roll the sausages into bite-sized meatballs and grill for 8-10 minutes, turning occasionally.
- Cook bacon: Add bacon strips to the grill and cook for 5 minutes on each side until crispy and golden.
- Assemble nachos: Layer tortilla chips on the baking tray. Top with sausage meatballs, cooked chicken, cranberry sauce, and cheese.
- Bake nachos: Preheat oven to 200°C (400°F) and bake the nachos for around 15 minutes until cheese is bubbly.
- Fry sage leaves: In a small pan, heat olive oil and fry sage leaves until crispy, about 1-2 minutes.
- Garnish and serve: Top baked nachos with pickled onions, crispy bacon, and fried sage leaves before serving.
