- 1 13.5 oz can chickpeas, drained and rinsed
- 1/2 cup nut or seed butter (almond or cashew)
- 1 cup vegan dark chocolate chips, melted
- For coating: 1 cup vegan dark chocolate chips, melted
- 1 tbsp coconut oil
- Optional toppings: cacao nibs, goji berries, sprinkles, shredded coconut, nuts/seeds, freeze dried fruits
Instructions
- Blend chickpeas and nut butter until smooth.
- Mix in melted dark chocolate chips until combined.
- Chill mixture in the fridge until firm enough to scoop.
- Scoop and roll into balls.
- Melt chocolate chips and coconut oil for coating.
- Dip truffles in chocolate mixture and place on parchment.
- Add optional toppings before the coating sets.
