Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • ½ cup peppermint extract or crushed mint candies (for filling)
  • 1 cup powdered sugar (for filling)
  • 2 tablespoons unsalted butter (for filling)
  • 2 teaspoons heavy cream (for filling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a separate large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing well.
  5. Gradually mix in dry ingredients until combined.
  6. Fold in chocolate chips.
  7. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper, spacing about 2 inches apart.
  8. Bake for 8-10 minutes, or until the edges are set.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. For the filling: In a small bowl, beat together powdered sugar, butter, heavy cream, and peppermint extract until smooth.
  11. Once cookies are cool, spread a generous amount of the mint filling on the bottom of one cookie and top with another to form a sandwich.
  12. Repeat with remaining cookies.

Notes

  • You can customize the mint flavor by adding more or less peppermint extract.
