- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- ½ cup peppermint extract or crushed mint candies (for filling)
- 1 cup powdered sugar (for filling)
- 2 tablespoons unsalted butter (for filling)
- 2 teaspoons heavy cream (for filling)
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a separate large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract, mixing well.
- Gradually mix in dry ingredients until combined.
- Fold in chocolate chips.
- Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper, spacing about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the filling: In a small bowl, beat together powdered sugar, butter, heavy cream, and peppermint extract until smooth.
- Once cookies are cool, spread a generous amount of the mint filling on the bottom of one cookie and top with another to form a sandwich.
- Repeat with remaining cookies.
Notes
- You can customize the mint flavor by adding more or less peppermint extract.
- The chocolate cookies can be used as a base for other fillings.
- Store in an airtight container at room temperature for up to a week.
