Ingredients

  • 3 pieces chicken breasts, boneless skinless
  • 1 large egg
  • 1.5 teaspoons kosher salt
  • 1 pinch black pepper
  • 1 tablespoon canola oil
  • 0.5 cups cornstarch
  • 1 tablespoon cornstarch (divided for use in sauce)
  • 0.25 cups flour
  • 0.5 cups lemon juice
  • 0.25 cups sugar
  • 0.67 cups water

Instructions

  1. Slice the chicken breasts in half, butterflying them into two thinner pieces each.
  2. Whisk together the egg, salt, pepper, and oil in a large bowl until fully combined.
  3. Mix ½ cup cornstarch and ¼ cup flour in a separate bowl.
  4. Heat canola oil in a large frying pan or wok to 375°F over medium-high heat.
  5. Dip each chicken piece into the egg mixture, ensuring they are well-coated.
  6. Fry the chicken for 3 to 4 minutes per side, or until golden and crisp.
  7. Remove the chicken from the pan, transferring it to a plate, and drain the excess oil.
  8. Add lemon juice, sugar, water, and the remaining 1 tablespoon of cornstarch to the pan, whisking to combine.
  9. Cook the sauce over medium heat until it thickens and becomes smooth.
  10. Slice the chicken into thin strips and serve with the lemon sauce poured generously over the top.
