- 0.5 cups cornstarch
- 1 tablespoon cornstarch (divided for use in sauce)
- 0.25 cups flour
- 0.5 cups lemon juice
- 0.25 cups sugar
- 0.67 cups water
Instructions
- Slice the chicken breasts in half, butterflying them into two thinner pieces each.
- Whisk together the egg, salt, pepper, and oil in a large bowl until fully combined.
- Mix ½ cup cornstarch and ¼ cup flour in a separate bowl.
- Heat canola oil in a large frying pan or wok to 375°F over medium-high heat.
- Dip each chicken piece into the egg mixture, ensuring they are well-coated.
- Fry the chicken for 3 to 4 minutes per side, or until golden and crisp.
- Remove the chicken from the pan, transferring it to a plate, and drain the excess oil.
- Add lemon juice, sugar, water, and the remaining 1 tablespoon of cornstarch to the pan, whisking to combine.
- Cook the sauce over medium heat until it thickens and becomes smooth.
- Slice the chicken into thin strips and serve with the lemon sauce poured generously over the top.
