- 1.5 cups pearl couscous
- 2 cups water or vegetable broth
- 1/2 teaspoon salt
- 1 large cucumber, diced
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped red onion
- For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the pearl couscous according to package directions using water or broth and 1/2 teaspoon salt. Let it cool completely.
- While the couscous cools, prepare the dressing by whisking together olive oil, lemon juice, minced garlic, 1/2 teaspoon salt, and pepper in a small bowl.
- In a large bowl, combine the cooled couscous, diced cucumber, parsley, mint, feta cheese, and red onion.
- Pour the dressing over the couscous mixture.
- Toss gently to combine all ingredients.
- Chill the cucumber couscous salad for at least 30 minutes before serving to allow the flavors to meld.
