  • 8 ounces Farfalle Pasta (or any short pasta like rotini or penne)
  • 2 cups Rotisserie Chicken (shredded)
  • 2 cups Seedless Red Grapes (diced)
  • 1 cup Celery (chopped)
  • 1 cup Walnuts (optional)
  • 1/4 cup Green Onions (chopped)
  • 1 cup Nonfat Greek Yogurt (or sour cream)
  • 1/2 cup Full-Fat Mayonnaise (or light version)
  • 2 tablespoons Honey (or maple syrup)
  • 2 tablespoons White Wine Vinegar (or champagne vinegar)
  • 1 tablespoon Poppy Seeds (optional)

Instructions

  1. Boil Pasta: Cook the farfalle pasta in salted water according to package instructions until al dente, about 8-10 minutes. Drain and cool by rinsing under cold water.
  2. Chop Ingredients: While the pasta is cooking, chop your ingredients! Dice the grapes, shred the rotisserie chicken, and chop the celery and green onions.
  3. Combine Salad: In a large mixing bowl, combine the cooled pasta with the chicken, grapes, celery, walnuts, and green onions.
  4. Prepare Dressing: In a separate bowl, whisk together the Greek yogurt, mayonnaise, honey, white wine vinegar, poppy seeds, and salt until smooth.
