Description

A vibrant and flavorful Chicken Fajita Bowl packed with grilled chicken, sautéed peppers and onions, served over a bed of rice with fresh toppings. A healthy and delicious option perfect for dinner.


Ingredients

  • 2 large chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked white rice
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup fresh salsa
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, toss the chicken strips with olive oil, chili powder, cumin, smoked paprika, salt, and black pepper until well coated.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-6 minutes, stirring occasionally, until cooked through. Remove from skillet and set aside.
  3. In the same skillet, add bell peppers and onion. Sauté for 5-7 minutes until vegetables are tender and slightly charred.
  4. Divide the cooked rice evenly among 4 bowls. Top each bowl with chicken, sautéed vegetables, shredded cheddar cheese, and fresh salsa.
  5. Garnish with chopped cilantro and a squeeze of lime. Serve immediately.
