- 1 lb potatoes, peeled and cubed
- 1/2 cup unsweetened plant-based milk
- 1/4 cup vegan butter
- Salt and black pepper to taste
- 2 large yellow onions, thinly sliced
- 1 tbsp olive oil
- 1 tsp sugar
- 1 sheet puff pastry, thawed
- 1 cup shredded vegan cheddar cheese
- 1/4 cup nutritional yeast
- 1 tbsp fresh chives, chopped (for garnish)
Instructions
- Boil the cubed potatoes until tender. Drain and mash them with plant-based milk, vegan butter, salt, and pepper until smooth and creamy. Set aside.
- In a skillet, heat olive oil over medium heat. Add the sliced onions and sugar. Cook, stirring occasionally, until the onions are soft and caramelized, about 20-25 minutes.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unroll the puff pastry sheet on a lightly floured surface. Cut it into 4 equal squares.
- Spoon a generous amount of mashed potatoes onto one half of each pastry square, leaving a small border.
- Top the mashed potatoes with caramelized onions and shredded vegan cheddar cheese.
- Fold the other half of the pastry over the filling to create a pocket. Crimp the edges with a fork to seal.
- Place the pastries on the prepared baking sheet.
- Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed up.
- Sprinkle with nutritional yeast and chopped chives before serving.

- For extra flavor, add a pinch of garlic powder to the mashed potatoes.
- You can prepare the mashed potato and onion filling a day in advance.
