Description

Flaky puff pastries filled with creamy mashed potatoes, sweet caramelized onions, and melty vegan cheese. This easy recipe makes a delightful snack or appetizer.


Ingredients

  • 1 lb potatoes, peeled and cubed
  • 1/2 cup unsweetened plant-based milk
  • 1/4 cup vegan butter
  • Salt and black pepper to taste
  • 2 large yellow onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 sheet puff pastry, thawed
  • 1 cup shredded vegan cheddar cheese
  • 1/4 cup nutritional yeast
  • 1 tbsp fresh chives, chopped (for garnish)

Instructions

  1. Boil the cubed potatoes until tender. Drain and mash them with plant-based milk, vegan butter, salt, and pepper until smooth and creamy. Set aside.
  2. In a skillet, heat olive oil over medium heat. Add the sliced onions and sugar. Cook, stirring occasionally, until the onions are soft and caramelized, about 20-25 minutes.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Unroll the puff pastry sheet on a lightly floured surface. Cut it into 4 equal squares.
  5. Spoon a generous amount of mashed potatoes onto one half of each pastry square, leaving a small border.
  6. Top the mashed potatoes with caramelized onions and shredded vegan cheddar cheese.
  7. Fold the other half of the pastry over the filling to create a pocket. Crimp the edges with a fork to seal.
  8. Place the pastries on the prepared baking sheet.
  9. Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed up.
  10. Sprinkle with nutritional yeast and chopped chives before serving.

  • For extra flavor, add a pinch of garlic powder to the mashed potatoes.
