Description

A delicious and healthy Italian-inspired dish featuring roasted spaghetti squash tossed with a creamy garlic parmesan sauce, fresh spinach, and melted cheese for the ultimate comfort food.


Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach leaves
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle the inside of each squash half with 1 tablespoon olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for 40-45 minutes, until tender.
  3. Meanwhile, in a large skillet over medium heat, add the remaining olive oil. Sauté the garlic until fragrant, about 1 minute.
  4. Add the spinach and cook until wilted. Stir in the heavy cream, parmesan cheese, and red pepper flakes. Cook until the sauce thickens slightly. Season with salt and pepper.
  5. When the squash is cool enough to handle, use a fork to shred the flesh into spaghetti-like strands. Add the strands to the skillet and toss to combine with the sauce.
  6. Stuff the squash halves with the creamy mixture, top with mozzarella cheese, and broil for 2-3 minutes until bubbly and golden. Garnish with chopped parsley and serve hot.
