Description
Cheesy cheddar broccoli pasta is a comforting dish that combines tender pasta and vibrant broccoli in a creamy cheddar sauce.
Ingredients
Scale
- 8 oz pasta shells
- 2 cups broccoli
- 2 cups cheddar cheese
- 1 cup half and half
- 2 tbsp butter
- 2 cloves garlic
- 1 tsp salt
- 1 tsp pepper
Instructions
- In a large pot, bring salted water to a boil and add the pasta shells. Cook until al dente according to package instructions, which usually takes about 8-10 minutes.
- With 2-3 minutes left on the pasta timer, toss in the chopped broccoli along with the boiling pasta. Cook until the broccoli is vibrant and tender.
- Once cooked, drain the pasta and broccoli but reserve a cup of the pasta water.
- In the same pot, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in the half and half, bringing it to a gentle simmer.
- Gradually whisk in the shredded cheddar cheese, stirring continuously until melted and smooth. If too thick, add reserved pasta water.
- Add the drained pasta and broccoli back into the pot, tossing gently to coat in the cheese sauce.
- Season generously with salt and pepper to taste. Serve warm, garnished with extra cheddar if desired.
Notes
- Consider using whole wheat or gluten-free pasta for a healthier twist.
- Fresh broccoli delivers the best texture and taste.
- Sharp cheddar enhances taste; feel free to swap with Gruyère or Monterey Jack.
- Substitute half and half with whole milk or a dairy-free alternative like almond milk if needed.
- Vegan butter can be used for a dairy-free option.
- Garlic can be omitted for those who prefer a milder taste.
- Adjust salt and pepper according to personal taste.
