- 3 cups bread flour
- 1 tablespoon instant yeast
- 1 teaspoon cooking/kosher salt
- 1.5 cups warm tap water
- 2 cups Colby cheese
- 2 cups optional cheese substitutes (Cheddar or gruyere)
Instructions
- In a large bowl, combine bread flour, instant yeast, and salt. Gently stir in warm water until there are no dry flour bits left.
- Cover the bowl tightly with cling wrap and set it in a warm spot. Allow the dough to rise until it doubles in size, which usually takes about 2-3 hours.
- Sprinkle flour on your work surface. Transfer the dough and flatten it into a disc. Lightly fold in the shredded cheese.
- About 30 minutes before baking, place a heavy pot (with its lid) in the oven and preheat to 240°C (450°F).
- Carefully place the shaped dough onto parchment paper. Pile the reserved cheese on top and transfer it to the hot pot.
- Cover with the lid and bake for 35 minutes. Then, remove the lid and continue baking for another 10 minutes or until golden brown.
- Once baked, carefully remove the bread and let it rest for at least 10 minutes before slicing.
Notes
- Use freshly shredded cheese for best results.
- Cheddar or gruyere can be used as substitutes.
