Description

Savor the Comfort of Cajun Shrimp and Grits Tonight

Ingredients

Scale
  • 4 cups Chicken Broth (Substitute with vegetable broth for a vegetarian option.)
  • 1 cup Corn Grits (Stone-ground grits are recommended for the best flavor.)
  • 2 tablespoons Butter (Try using vegan butter for a dairy-free version.)
  • 1/2 cup Parmesan Cheese (Can be omitted for a vegan dish.)
  • 3 cloves Garlic (Fresh minced garlic is preferred for maximum flavor.)
  • 1 pound Shrimp (Fresh shrimp enhances flavor; substitute with scallops or omit for a vegetarian option.)
  • 2 tablespoons Cajun Seasoning (Adjust to taste, adding cayenne for extra heat if desired.)
  • 2 tablespoons Lemon Juice (Fresh lemon juice is ideal.)
  • 3 tablespoons Green Onions (Used for garnish.)

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Whisk in corn grits and cook over medium heat, stirring frequently until thickened, approximately 5 minutes.
  2. Stir in butter and Parmesan until melted and smooth. Add a pinch of salt to taste and set aside.
  3. In a large skillet, melt butter over medium-high heat. Add minced garlic followed by shrimp; sauté until shrimp turns pink and opaque, about 3-4 minutes.
  4. Sprinkle Cajun seasoning over the shrimp and cook for an additional minute, stirring well. Finish with a squeeze of fresh lemon juice.
  5. Spoon the creamy grits onto plates, generously topping them with the sautéed shrimp. Garnish with sliced green onions.

Notes

  • This dish can be adjusted for spice level by varying Cajun seasoning.
  • Using stone-ground grits enhances texture and flavor.
  • Fresh ingredients yield the best results.
