Description

Savory Breakfast Enchiladas with Sausage for a Brunch Win

Ingredients

Scale
  • 6 large Eggs (Substitutes for vegan option available.)
  • 1 lb Sausage (Can substitute with plant-based sausage.)
  • 1 cup Cheese (Dairy alternatives are available.)
  • 2 cups Hash Browns (Roasted potatoes are a good alternative.)
  • 8 large Tortillas (Gluten-free options available.)
  • 1 lb Sausage (for Gravy) (Base for creamy sauce.)
  • 1/4 cup Flour (To thicken the gravy.)
  • 2 cups Milk (Use plant-based for a vegan version.)
  • Seasonings (Adjust to taste.)

Instructions

  1. Scramble the eggs until just set in a skillet. Mix in crumbled sausage, cheese, and crispy hash browns until melted and heated.
  2. Spoon an even portion of the filling into each tortilla. Roll tightly and place seam-side down in a greased baking dish.
  3. Brown sausage over medium heat in a saucepan. Stir in flour, then gradually add milk, stirring constantly. Simmer until thick.
  4. Pour the warm gravy evenly over the enchiladas. Cover with foil and bake at 350°F for 25 minutes, then uncover and bake for another 10 minutes.
  5. Let cool slightly before serving. Garnish with fresh herbs or extra cheese as desired.
