Instructions
- Scramble the eggs until just set in a skillet. Mix in crumbled sausage, cheese, and crispy hash browns until melted and heated.
- Spoon an even portion of the filling into each tortilla. Roll tightly and place seam-side down in a greased baking dish.
- Brown sausage over medium heat in a saucepan. Stir in flour, then gradually add milk, stirring constantly. Simmer until thick.
- Pour the warm gravy evenly over the enchiladas. Cover with foil and bake at 350°F for 25 minutes, then uncover and bake for another 10 minutes.
