Ingredients

  • 4 large Eggs
  • 1 can Sweetened Condensed Milk
  • 2 cups Milk
  • 1 cup Heavy Cream
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Ground Cloves
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 pinch Salt
  • 1 cup Bourbon
  • 3 tablespoons Sugar

Instructions

  1. Pour the milk into a large saucepan and bring it to a light simmer over low heat, stirring to avoid boiling.
  2. Separate the egg yolks and beat them in a large mixing bowl for about 5 minutes until frothy.
  3. Add the sweetened condensed milk to the beaten egg yolks and mix for an additional 2-3 minutes.
  4. Gradually add the warm milk to the egg mixture, stirring gently to mix smoothly.
  5. Return the mixture to the saucepan and let it simmer for 15-20 minutes, stirring occasionally until slightly thickened.
  6. Prepare an ice bath and cool the eggnog mixture quickly by placing it in a bowl over ice.
  7. Beat the reserved egg whites in a clean bowl until frothy, then gradually add sugar and beat until soft peaks form.
  8. Incorporate the spices and fold in the heavy cream, salt, and bourbon into the cooled mixture.
  9. Gently fold in the whipped egg whites to achieve a light texture.
  10. Chill the eggnog in the refrigerator for 30 minutes before serving.
