Instructions

- Return the mixture to the saucepan and let it simmer for 15-20 minutes, stirring occasionally until slightly thickened.
- Prepare an ice bath and cool the eggnog mixture quickly by placing it in a bowl over ice.
- Beat the reserved egg whites in a clean bowl until frothy, then gradually add sugar and beat until soft peaks form.
- Incorporate the spices and fold in the heavy cream, salt, and bourbon into the cooled mixture.
- Gently fold in the whipped egg whites to achieve a light texture.
- Chill the eggnog in the refrigerator for 30 minutes before serving.
