A hearty Bison & Vegetable Stew that warms both body and soul, perfect for chilly nights.
Ingredients

- 1 lb Ground Buffalo Meat (Substitute with ground beef or turkey if desired.)
- 1 medium Onion (Yellow or white onions are preferred.)
- 3 cloves Garlic (Mince finely or use garlic powder.)
- 2 stalks Celery (Can substitute with green bell pepper.)
- 2 medium Carrot (Parsnips can be used as an alternative.)
- 2 medium Potato (Sweet potatoes may also be used.)
- 1 can Diced Tomatoes (Canned for convenience.)
- 2 leaves Bay Leaves (Can omit if unavailable.)
- 2 tbsp Runnin’ Wild Gourmet Smokey Paprika Rub (Regular paprika with cumin can substitute.)
- 1 tsp Black Pepper (Freshly ground is preferred.)
- 1 cup Red Wine (Broth serves as a non-alcoholic substitute.)
- 4 cups Low Sodium Beef Broth (Vegetable broth can be a lighter option.)
- 1 spray Nonstick Cooking Spray (A bit of oil can be used instead.)
Instructions
- Spray a skillet with nonstick cooking spray and heat it over medium-high.
- Add ground buffalo meat to the skillet, browning it until fully cooked and no longer pink, stirring occasionally for about 6-8 minutes.
- Transfer the meat to the slow cooker.
- Add onion, garlic, celery, carrot, potato, diced tomatoes, bay leaves, smokey paprika rub, black pepper, red wine, and beef broth to the slow cooker.
- Set the slow cooker to high and let it simmer for 6-8 hours until vegetables are tender and flavors meld beautifully.
- Optional: Sprinkle fresh herbs before serving.
