  • 2 medium Pears
  • 4 oz Blue Cheese
  • 1 cup Pecans
  • 1 tablespoon Fresh Thyme
  • 2 tablespoons Honey

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast them for 45-60 minutes until tender. Allow them to cool, then peel off the skin.
  2. While the beets are cooling, slice the pears thinly. Drizzle with lemon juice to prevent browning, keeping them fresh and vibrant.
  3. Start layering your stacks by placing a slice of roasted beet, followed by a slice of pear, and then a piece of blue cheese. Repeat until the desired height is reached.
