- Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast them for 45-60 minutes until tender. Allow them to cool, then peel off the skin.
- While the beets are cooling, slice the pears thinly. Drizzle with lemon juice to prevent browning, keeping them fresh and vibrant.
- Start layering your stacks by placing a slice of roasted beet, followed by a slice of pear, and then a piece of blue cheese. Repeat until the desired height is reached.
- Scatter toasted pecans on top of each stack, adding a delightful crunch, and garnish with fresh thyme for an aromatic touch.
