Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash 3-4 ripe bananas until mostly smooth.
  3. Combine the mashed bananas with sour cream, beaten egg, and vanilla extract; mix well.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
