- 200 g feta cheese, block
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 1 clove garlic, minced
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a small baking dish with olive oil.
- Place the block of feta cheese in the center of the baking dish. Scatter the cherry tomatoes and minced garlic around the feta.
- Drizzle olive oil over the feta and tomatoes. Sprinkle with dried oregano, crushed red pepper flakes, salt, and black pepper.
- Bake for 10 minutes, then remove from the oven. Carefully crack the eggs around the feta and tomatoes.
- Return the dish to the oven and bake for another 8-10 minutes, or until the egg whites are set but yolks are still slightly runny.
- Garnish with fresh parsley and serve the baked feta eggs immediately with crusty bread if desired.

- Use a block of feta for the creamiest results; crumbled feta may dry out.
- If your feta is especially salty, you may want to skip adding extra salt.
