Description

This Mediterranean-inspired Baked Feta Eggs recipe is simple to prepare and packed with flavor. It’s a quick and satisfying meal perfect for busy mornings or a delightful brunch.


Ingredients

  • 200 g feta cheese, block
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a small baking dish with olive oil.
  2. Place the block of feta cheese in the center of the baking dish. Scatter the cherry tomatoes and minced garlic around the feta.
  3. Drizzle olive oil over the feta and tomatoes. Sprinkle with dried oregano, crushed red pepper flakes, salt, and black pepper.
  4. Bake for 10 minutes, then remove from the oven. Carefully crack the eggs around the feta and tomatoes.
  5. Return the dish to the oven and bake for another 8-10 minutes, or until the egg whites are set but yolks are still slightly runny.
  6. Garnish with fresh parsley and serve the baked feta eggs immediately with crusty bread if desired.

Notes

  • Use a block of feta for the creamiest results; crumbled feta may dry out.
  • If your feta is especially salty, you may want to skip adding extra salt.
  • Add a handful of fresh spinach before baking for extra greens.
  • For a spicy kick, swirl 1–2 tsp harissa paste into the tomatoes.
  • Toss in sliced Kalamata olives and roasted red peppers for a Mediterranean style baked feta eggs.
